Baci di Dama Italian Cookies

Fall in love with these delicate Italian cookies that melt in your mouth and sandwich rich chocolate in every bite. Perfect for gifting or enjoying with your favorite coffee.

Ingredients
  

1 cup finely ground hazelnuts or almonds

1 cup all-purpose flour

1/2 cup granulated sugar

1/2 cup unsalted butter, softened

1/4 teaspoon salt

1 teaspoon vanilla extract

3 oz dark chocolate, chopped

1 teaspoon coconut oil or butter (optional)

Instructions
 

  • Cream butter and sugar together until smooth.
    Add vanilla extract and salt, then mix well.
    Gradually mix in flour and ground nuts until a dough forms.
    Chill the dough for 30 minutes.
    Preheat oven to 325°F and line a baking sheet.
    Roll dough into small balls and place on the sheet.
    Bake for 15–18 minutes until lightly golden on the bottom.
    Cool cookies completely.
    Melt chocolate with coconut oil until smooth.
    Sandwich cookies together with melted chocolate and let set
