Baked Apple Pie Rice Paper Rolls

Crispy outside, warm apple pie flavor inside. These baked apple pie rice paper rolls are the easiest dessert that tastes like a bakery treat.

Ingredients
  

2 medium apples, peeled and diced

2 tbsp granulated sugar

1 tbsp brown sugar

1 tsp ground cinnamon

¼ tsp ground nutmeg

1 tsp vanilla extract

1 tbsp lemon juice

8 rice paper wrappers

2 tbsp melted butter

1 tbsp maple syrup or honey (optional)

1 tbsp cornstarch

Powdered sugar for dusting (optional)

Instructions
 

  • Dice apples and cook them in a skillet with sugar, cinnamon, nutmeg, lemon juice, and vanilla for about 5 minutes.
    Add cornstarch to the apple mixture and stir until thickened. Let the filling cool slightly.
    Dip a rice paper wrapper into warm water for about 5 seconds until soft.
    Place about two tablespoons of apple filling near the bottom of the wrapper.
    Fold the sides inward and roll tightly like a spring roll.
    Place the rolls seam side down on a parchment-lined baking sheet.
    Brush each roll lightly with melted butter.
    Bake at 375°F (190°C) for 18–22 minutes until golden and crisp.
    Drizzle with maple syrup or honey and dust with powdered sugar before serving.
