2 ribeye or New York strip steaks, about 10 oz each

1 tablespoon olive oil

1 teaspoon kosher salt

1/2 teaspoon black pepper

1/2 cup crumbled blue cheese

1/4 cup panko breadcrumbs

2 tablespoons butter, softened

1 tablespoon fresh parsley, chopped

1 small garlic clove, minced

Instructions
 

  • Pat steaks dry, season with salt and pepper, and let rest at room temperature for 20 minutes.
    Mix blue cheese, butter, breadcrumbs, parsley, and garlic in a bowl until combined.
    Heat olive oil in a skillet over medium-high heat and sear steaks 2 to 3 minutes per side.
    Transfer steaks to a baking sheet and spread blue cheese mixture evenly on top.
    Broil for 2 to 4 minutes until the crust is melted and lightly golden.
    Rest steaks for 5 minutes before serving.
