Cajun Crispy Chicken Sandwich with Garlic Aioli

Crispy, juicy, and packed with bold Cajun flavor, this chicken sandwich takes comfort food to the next level. One bite of the crunchy chicken and creamy garlic aioli will make you crave it again.

Ingredients
  

2 large boneless chicken breasts (about 1 lb. / 450 g), sliced into sandwich portions

1 cup buttermilk

1 tbsp Cajun seasoning

1 tsp smoked paprika

1 tsp garlic powder

1 tsp salt

1/2 tsp black pepper

1 cup all-purpose flour

1/2 cup cornstarch

1 tsp Cajun seasoning

1/2 tsp paprika

1/2 tsp salt

1/2 cup mayonnaise

2 cloves garlic, minced

1 tbsp lemon juice

4 brioche burger buns

1 cup shredded lettuce

1 tomato, sliced

4 pickle slices

Oil for frying

Instructions
 

  • In a bowl, mix buttermilk, Cajun seasoning, paprika, garlic powder, salt, and pepper. Add chicken and marinate for at least 30 minutes.
    In a separate bowl, combine flour, cornstarch, Cajun seasoning, paprika, and salt.
    Remove chicken from marinade and dredge each piece in the flour mixture, pressing coating firmly onto the chicken.
    Heat oil in a deep skillet to 350°F (175°C).
    Fry chicken pieces for about 4–5 minutes per side until golden brown and fully cooked.
    In a small bowl, mix mayonnaise, minced garlic, lemon juice, and salt to make the garlic aioli.
    Toast the brioche buns lightly in a skillet.
    Spread garlic aioli on the buns, add crispy chicken, lettuce, tomato, and pickles.
    Assemble the sandwich and serve immediately
