2 cups cooked chickpeas or 1 can, drained and rinsed
2 cups grated carrots
2 tbsp fresh ginger, finely grated
2 tbsp olive oil
1 tbsp lemon juice
1 tbsp honey or maple syrup
1 garlic clove, minced
1/2 tsp salt
1/4 tsp black pepper
2 tbsp chopped fresh cilantro or parsley
1 tbsp sesame seeds (optional)
Instructions
Add chickpeas to a large bowl and pat dry.Grate carrots and add to the bowl.Whisk olive oil, lemon juice, honey or maple syrup, ginger, garlic, salt, and pepper.Pour dressing over salad and toss well.Add herbs and mix gently.Let sit for 10–15 minutes before serving.
