Cheesy Meatloaf Casserole Recipe

A cozy, hearty comfort meal loaded with flavor and melty cheese. This cheesy meatloaf casserole is the perfect satisfying dinner for any night of the week.

Ingredients
  

2 lb ground beef

1 cup breadcrumbs

1 small onion, finely diced

2 large eggs

1 tbsp Worcestershire sauce

1 tsp garlic powder

1 tsp onion powder

1 tsp salt

½ tsp black pepper

½ cup ketchup

3 cups mashed potatoes

¼ cup milk

2 tbsp butter

½ tsp salt

2 cups shredded cheddar cheese

1 tbsp chopped parsley (optional)

Instructions
 

  • Preheat oven to 375°F. Grease a 9×13 baking dish.
    Mix ground beef, breadcrumbs, onion, eggs, Worcestershire sauce, garlic powder, onion powder, salt, pepper, and ketchup.
    Press mixture into baking dish and bake 20–25 minutes.
    Warm mashed potatoes with milk, butter, and salt.
    Spread mashed potatoes over par-baked meatloaf.
    Top with shredded cheddar cheese.
    Bake uncovered 15–20 minutes until cheese melts and browns slightly.
    Rest 10 minutes before slicing and serving.
