Chocolate Strawberry Swirl Cheesecake

Ingredients
  

1 1/2 cups graham cracker crumbs

1/4 cup granulated sugar

1/2 cup unsalted butter, melted

24 oz. cream cheese, softened

1 cup granulated sugar

3 large eggs

1 tsp vanilla extract

1/2 cup sour cream

1/4 cup heavy cream

4 oz. semi-sweet chocolate, melted

1/2 cup strawberry puree

Optional: fresh strawberries for garnish

Instructions
 

  • Preheat oven to 325°F (163°C). Mix graham cracker crumbs, 1/4 cup sugar, and melted butter. Press into a 9-inch springform pan and bake 10 minutes.
    Beat cream cheese and 1 cup sugar until smooth. Add eggs one at a time, then vanilla, sour cream, and heavy cream.
    Divide batter into three portions. Mix chocolate into one portion and strawberry puree into another, leaving one plain.
    Pour plain batter into crust. Spoon chocolate and strawberry batters on top and swirl gently with a skewer.
    Bake cheesecake in a water bath for 55-65 minutes until edges are set and center jiggles slightly. Cool in oven for 1 hour.
    Refrigerate at least 4 hours or overnight.
    Remove from pan, garnish with fresh strawberries or chocolate drizzle, and slice with a hot knife.
