Classic French Onion Pot Roast

Slow cooked, deeply savory, and impossible to resist. This French onion inspired pot roast turns an ordinary dinner into pure comfort.

Ingredients
  

3 lb chuck roast

2 tbsp olive oil

4 large yellow onions, sliced

4 cloves garlic, minced

2 cups beef broth

1 cup concentrated beef stock

2 tbsp Worcestershire sauce

2 tbsp all-purpose flour

1 tsp salt

1 tsp black pepper

2 sprigs fresh thyme

Instructions
 

  • Season the chuck roast with salt and pepper.
    Sear the roast in hot olive oil until browned on all sides.
    Remove beef and caramelize onions in the same pot.
    Add garlic and flour, then stir well.
    Deglaze with beef broth and Worcestershire sauce.
    Return roast to pot and add thyme.
    Cover and cook on low heat until tender.
    Adjust seasoning and serve hot.
