Classic Ground Beef and Potato Soup

Ingredients
  

1 lb ground beef

1 tablespoon olive oil

1 medium yellow onion, diced

3 cloves garlic, minced

4 medium russet potatoes, peeled and diced

4 cups beef broth

1 cup whole milk

1/2 cup heavy cream

1 teaspoon salt

1/2 teaspoon black pepper

1 teaspoon paprika

1/2 teaspoon dried thyme

1 cup shredded cheddar cheese (optional)

Instructions
 

  • Heat olive oil in a large pot over medium heat and brown the ground beef until fully cooked.
    Add diced onion and cook until softened, then stir in garlic and cook briefly.
    Add diced potatoes, paprika, and thyme, stirring to combine.
    Pour in beef broth and simmer until potatoes are tender.
    Lower heat and stir in milk and heavy cream, heating gently.
    Add cheddar cheese if using, stir until melted, and serve hot.
