Cottage Cheese Egg Bites (High-Protein, Fluffy & Easy Meal Prep)

Ingredients
  

6 large eggs

1 cup cottage cheese

1/2 cup shredded cheddar cheese

1/4 cup diced bell peppers

1/4 cup chopped spinach

2 tbsp chopped green onions

1/2 tsp salt

1/4 tsp black pepper

1/4 tsp garlic powder

1 tbsp olive oil

Instructions
 

  • Preheat oven to 350°F and grease a muffin tin.
    Blend eggs and cottage cheese until smooth.
    Transfer to a bowl and mix in remaining ingredients.
    Pour mixture into muffin cups, filling three-quarters full.
    Bake for 20 to 25 minutes until set.
    Cool slightly, remove, and serve.
