Creamy Chicken Soup Made Simple in the Instant Pot

You will not believe how cozy this creamy chicken soup tastes straight from the Instant Pot. Dinner just got easier and way more comforting.

Ingredients
  

1 lb boneless skinless chicken breasts or thighs

1 tablespoon olive oil

1 medium yellow onion, diced

2 medium carrots, sliced

2 celery stalks, chopped

3 cloves garlic, minced

4 cups chicken broth

1 teaspoon salt

1/2 teaspoon black pepper

1 teaspoon dried thyme

1 cup heavy cream

2 tablespoons cornstarch mixed with 2 tablespoons water

Optional fresh parsley for garnish

Instructions
 

  • Set Instant Pot to sauté and heat olive oil. Add onion, carrots, and celery, cooking until softened.
    Stir in garlic, salt, pepper, and thyme, cooking briefly until fragrant.
    Add chicken and pour in chicken broth.
    Seal lid and cook on high pressure for 10 minutes.
    Allow a 5 minute natural release, then quick release remaining pressure.
    Remove chicken, shred it, and return it to the pot.
    Turn sauté mode on, stir in cream and cornstarch slurry, and simmer until thickened.
    Adjust seasoning, garnish if desired, and serve hot.
