Crispy Roasted Sweet Potatoes (Perfectly Golden & Caramelized)
Crispy on the outside, soft and sweet on the inside, these roasted sweet potatoes are the ultimate side dish. Once you try this method, you will never make them any other way.
2 large sweet potatoes (about 2 lbs or 900 g), peeled and cubed
2 tablespoons olive oil
1 teaspoon salt
½ teaspoon black pepper
1 teaspoon garlic powder
½ teaspoon smoked paprika
½ teaspoon dried thyme
1 tablespoon cornstarch
Instructions
Preheat oven to 425°F (220°C).Peel and cube sweet potatoes into even pieces.Pat potatoes dry with a towel.Toss with cornstarch until lightly coated.Add olive oil and seasonings, then mix well.Spread in a single layer on a baking sheet.Roast for 25 to 30 minutes, flipping halfway through.Serve hot and enjoy.
