Delicious Fluffy Cranberry Orange Ricotta Pancakes

A warm citrus burst and fluffy ricotta make these cranberry orange pancakes the perfect cozy brunch treat. They taste like a bakery-style stack made at home.

Ingredients
  

1 cup (240 g) ricotta cheese

1 cup (125 g) all-purpose flour

2 tbsp (25 g) granulated sugar

1 tbsp (14 g) melted butter

2 large eggs

½ cup (120 ml) milk

1 cup (100 g) fresh or frozen cranberries

Zest of 1 orange

1 tsp vanilla extract

1 tsp baking powder

¼ tsp salt

Instructions
 

  • Whisk flour, sugar, baking powder, and salt in a bowl.
    In another bowl, mix ricotta, eggs, milk, vanilla, and orange zest until smooth.
    Fold dry ingredients into wet ingredients gently.
    Fold in cranberries.
    Heat a skillet on medium-low and lightly grease it.
    Scoop ¼ cup batter per pancake and cook until bubbles form.
    Flip and cook until golden and set.
    Serve warm with your favorite toppings.
