Easy Cranberry Baked Chicken Thighs Recipe

Crispy juicy and coated in a sticky cranberry glaze these baked chicken thighs are the easy dinner your weeknight routine has been missing.

Ingredients
  

8 bone-in skin-on chicken thighs (about 3 lbs or 1.3 kg)

1 cup cranberry sauce

1 cup fresh or frozen whole cranberries

3 tbsp olive oil

3 tbsp honey

4 cloves garlic minced

2 tbsp apple cider vinegar

1 tsp paprika

1 tsp dried thyme

1 tsp salt

1/2 tsp black pepper

1/2 tsp onion powder

Instructions
 

  • Preheat oven to 400°F (200°C) and place a wire rack on a foil-lined baking sheet.
    Pat chicken thighs dry and coat with olive oil.
    Mix cranberry sauce, cranberries, honey, garlic, vinegar, and spices into a glaze.
    Coat chicken completely with the cranberry mixture.
    Arrange thighs on the rack skin-side up and spoon extra glaze on top.
    Bake 35–45 minutes, basting halfway through.
    Check for doneness at 165°F (74°C). Broil 2–3 minutes if desired.
    Rest 5 minutes and serve with extra pan sauce.
