Easy Popovers Recipe

Light, crisp, and bakery worthy, these easy homemade popovers rise tall every time. Make them for brunch or dinner when you want something simple yet impressive.

Ingredients
  

1 cup (240 ml) whole milk

2 large eggs

1 cup (120 g) all purpose flour

1 tbsp (14 g) unsalted butter, melted

½ tsp (3 g) kosher salt

1 tbsp softened butter for greasing the pan

Instructions
 

  • Preheat oven to 450°F (232°C) and place the popover pan inside to heat.
    Warm the milk gently until lukewarm.
    Whisk eggs until frothy, then add milk, salt, and melted butter.
    Add flour and whisk until mostly smooth.
    Let the batter rest for 10–15 minutes.
    Remove the hot pan, grease each cup with softened butter, and fill halfway with batter.
    Bake for 15 minutes at 450°F, then reduce heat to 350°F (177°C) and bake 15–20 minutes more.
    Serve immediately while warm and crisp.

Notes

  • Room-temp ingredients = taller rise
  • Re-crisp leftovers 5 min at 350°F
  • Try cheddar or cinnamon variation
