Full Gourmet Thick Cheesecake

This thick, creamy cheesecake tastes like it came straight from a high end bakery. One slice in and you will never go back to thin cheesecake again.

Ingredients
  

2 cups graham cracker crumbs

1/2 cup unsalted butter, melted

2 tablespoons granulated sugar

2 lb full-fat cream cheese, room temperature

1 1/4 cups granulated sugar

1/2 cup heavy cream

1/4 cup sour cream

4 large eggs, room temperature

2 teaspoons vanilla extract

1 tablespoon lemon juice

1 tablespoon cornstarch

Instructions
 

  • Preheat oven to 325°F and prepare a 9-inch springform pan with parchment and foil.
    Mix crust ingredients, press into pan, and bake for 10 minutes.
    Beat cream cheese until smooth, then add sugar gradually.
    Mix in cream, sour cream, vanilla, and lemon juice gently.
    Add eggs one at a time, then blend in cornstarch.
    Pour filling over crust and place pan in a water bath.
    Bake 75 to 90 minutes until edges are set and center jiggles slightly.
    Cool slowly, then refrigerate at least 6 hours before slicing.
