Greek Chicken Bowls

Bright, colorful, and bursting with flavor, these Greek Chicken Bowls are the ultimate weeknight dinner. Juicy chicken, crisp veggies, and creamy tzatziki make every bite irresistible.

Ingredients
  

1 lb. boneless, skinless chicken breasts, cut into bite-sized pieces

2 tbsp olive oil

2 cloves garlic, minced

1 tsp dried oregano

1 tsp paprika

½ tsp salt

¼ tsp black pepper

Juice of 1 lemon

1 cup cooked white rice or brown rice

1 cup cherry tomatoes, halved

1 cup cucumber, diced

½ cup red onion, thinly sliced

¼ cup kalamata olives, pitted and sliced

¼ cup crumbled feta cheese

½ cup tzatziki sauce

Optional: fresh parsley for garnish

Instructions
 

  • Combine chicken, olive oil, garlic, oregano, paprika, lemon juice, salt, and pepper in a bowl. Marinate for 30–60 minutes.
    Heat a skillet over medium-high heat and cook chicken for 5–6 minutes per side until golden and cooked through. Let rest.
    Chop cucumbers, cherry tomatoes, and red onions. Slice olives and crumble feta.
    Assemble bowls with a base of rice, then layer chicken, vegetables, olives, feta, and tzatziki. Garnish with parsley.
    Serve immediately or pack for meal prep, keeping tzatziki separate until ready to enjoy.
