Green Bean Salad Recipe

1 lb fresh green beans

2 tablespoons olive oil

1 tablespoon lemon juice

1 teaspoon Dijon mustard

1 small garlic clove, minced

1/2 teaspoon kosher salt

1/4 teaspoon black pepper

1/4 cup sliced almonds or walnuts

1/4 cup crumbled feta or shaved Parmesan

1 tablespoon chopped fresh parsley or dill

Instructions
 

  • Bring a pot of salted water to a boil and cook green beans for 3 to 4 minutes until tender-crisp.
    Transfer beans to ice water, cool briefly, then drain and pat dry.
    Whisk olive oil, lemon juice, Dijon mustard, garlic, salt, and pepper in a bowl.
    Toss green beans with dressing until evenly coated.
    Add nuts, cheese, and herbs, then toss gently and serve.
