Grilled Peach Blueberry Salad

Bright, smoky peaches meet juicy blueberries in this colorful salad that’s perfect for summer lunches or dinner sides.

Ingredients
  

3 ripe peaches, halved and pitted

1 cup fresh blueberries, washed

5 cups baby spinach or mixed greens

¼ cup crumbled goat cheese or feta

½ cup toasted pecans or walnuts

2 tbsp extra-virgin olive oil

1 tbsp honey

1 tbsp fresh lime juice

Salt and black pepper to taste

Optional: fresh mint leaves for garnish

Instructions
 

  • Brush halved peaches with olive oil and grill cut-side down for 3–4 minutes until caramelized. Flip briefly and remove.
    Whisk together olive oil, honey, lime juice, salt, and pepper to make the dressing.
    Place greens in a large bowl and add blueberries. Toss gently.
    Slice grilled peaches and arrange over the greens. Sprinkle with cheese.
    Scatter toasted nuts and garnish with mint leaves.
    Drizzle dressing over the salad, toss gently, and serve immediately.
