Hawaiian Chicken Sheet Pan A Flavorful

This Hawaiian-inspired sheet pan chicken is sweet, savory, and unbelievably easy. Dinner feels like a mini vacation with just one pan and big flavor.

Ingredients
  

1.5 lb boneless, skinless chicken breasts or thighs

2 cups fresh pineapple chunks

1 large red bell pepper, sliced

1 large green bell pepper, sliced

1 medium red onion, cut into wedges

0.5 cup pineapple juice

0.25 cup low sodium soy sauce

3 tbsp brown sugar

2 tbsp rice vinegar

2 cloves garlic, minced

1 tbsp olive oil

1 tsp ground ginger

Salt and black pepper to taste

Instructions
 

  • Preheat oven to 400°F and line a large sheet pan with parchment paper.
    Whisk pineapple juice, soy sauce, brown sugar, rice vinegar, garlic, ginger, salt, and pepper in a bowl.
    Add chicken, pineapple, bell peppers, and onion to a large bowl and pour sauce over top.
    Toss until everything is evenly coated.
    Spread mixture in a single layer on the prepared sheet pan.
    Roast for 25 to 30 minutes, stirring once halfway through.
    Remove from oven, rest briefly, and serve warm.
