Ingredients
  

1 lb boneless, skinless chicken breasts or thighs

2 tablespoons olive oil

2 teaspoons chili powder

1 teaspoon ground cumin

1 teaspoon smoked paprika

1/2 teaspoon garlic powder

1/2 teaspoon onion powder

Salt and black pepper to taste

2 cups long-grain white or brown rice

4 cups chicken broth

1 cup corn kernels

1 cup black beans, rinsed and drained

Fresh toppings like avocado, lettuce, tomatoes, cilantro, and lime wedges

Instructions
 

  • Rinse rice and cook it in chicken broth until tender, then fluff and set aside.
    Heat olive oil in a skillet and add chicken pieces in a single layer.
    Season chicken with spices, salt, and pepper, then cook until golden and fully cooked.
    Stir in corn and black beans and cook until warmed through.
