High Protein Cottage Cheese Egg Salad A Nutritious

This high protein egg salad is creamy, fresh, and surprisingly light. Perfect for quick lunches that keep you full and happy.

Ingredients
  

6 large eggs

1 cup low fat cottage cheese

1 tablespoon Dijon mustard

1 tablespoon lemon juice

1/2 cup diced celery

1/4 cup minced red onion

2 tablespoons chopped fresh herbs

1/2 teaspoon salt

1/4 teaspoon black pepper

Instructions
 

  • Boil eggs until set, cool in ice water, peel, and chop.
    Mash or blend cottage cheese until smooth, then mix with mustard and lemon juice.
    Fold chopped eggs into the creamy base.
    Add celery, onion, herbs, salt, and pepper, then stir gently.
    Chill briefly, adjust seasoning, and serve.
