Keto Crispy Reuben Roll-Ups

Crispy, cheesy, and packed with classic deli flavor. These Keto Crispy Reuben Roll-Ups turn your favorite sandwich into an irresistible low carb snack you will want to make again and again.

Ingredients
  

8 slices Swiss cheese

8 slices corned beef

½ cup sauerkraut (drained well)

2 tbsp cream cheese

2 tbsp sugar-free Thousand Island dressing

½ tsp garlic powder

½ tsp onion powder

½ tsp black pepper

Optional:

2 tbsp extra sugar-free Thousand Island dressing for dipping

1 tbsp chopped parsley for garnish

Instructions
 

  • Preheat oven to 375°F (190°C) and line a baking sheet with parchment paper.
    In a bowl, mix cream cheese, Thousand Island dressing, garlic powder, onion powder, and black pepper until smooth.
    Stir the drained sauerkraut into the mixture until combined.
    Place Swiss cheese slices on the prepared baking sheet and bake for 5–7 minutes until bubbly and lightly golden.
    Remove from the oven and place one slice of corned beef on each melted cheese round.
    Spoon a small amount of the sauerkraut mixture onto the center of each slice.
    Carefully roll the cheese around the filling while it is still warm and flexible.
    Return the roll-ups to the oven and bake for another 3–4 minutes to crisp.
    Let cool for 2–3 minutes before serving.
