Leftover Rotisserie Chicken

Turn last night’s chicken into tonight’s favorite dinner. This easy leftover rotisserie chicken recipe tastes fresh, cozy, and totally crave-worthy.

Ingredients
  

3 cups leftover rotisserie chicken, shredded

2 tablespoons olive oil

1 medium yellow onion, diced

3 cloves garlic, minced

1 red bell pepper, sliced

1 teaspoon smoked paprika

½ teaspoon black pepper

¾ teaspoon salt

½ teaspoon dried thyme

½ cup chicken broth

½ cup heavy cream or half-and-half

½ cup shredded mozzarella or cheddar cheese

Fresh parsley or green onions for garnish

Instructions
 

  • Heat olive oil in a skillet over medium heat and cook onion until soft.
    Add garlic and bell pepper, stirring until fragrant.
    Stir in spices and toast briefly.
    Pour in chicken broth and simmer, then add cream.
    Gently fold in leftover rotisserie chicken and warm through.
    Add cheese and stir until melted.
    Garnish and serve warm.
