Lemon Cookies Recipe (Soft, Buttery & Zesty Perfection)

Fresh, soft, and bursting with citrus flavor, these lemon cookies are the perfect sweet treat for any day. One bite and you will want to bake them again and again.

Ingredients
  

2 ½ cups all-purpose flour

1 tsp baking soda

½ tsp baking powder

½ tsp salt

¾ cup unsalted butter, softened

1 cup granulated sugar

1 large egg

2 tbsp fresh lemon juice

1 tbsp lemon zest

1 tsp vanilla extract

Optional: powdered sugar for coating

Instructions
 

  • Preheat oven to 350°F (175°C) and line a baking sheet with parchment paper.
    In a bowl, whisk flour, baking soda, baking powder, and salt.
    In another bowl, beat butter and sugar until light and fluffy.
    Mix in egg, lemon juice, lemon zest, and vanilla extract.
    Gradually combine dry ingredients with wet mixture.
    Roll dough into small balls and place on baking sheet.
    Bake for 10–12 minutes until edges are lightly golden.
    Cool slightly, then transfer to a rack and serve.
