Lemon Herb Quinoa with Chickpeas (Fresh Healthy Flavorful Recipe)

Ingredients
  

1 cup quinoa, rinsed

2 cups water or vegetable broth

1 can chickpeas, drained and rinsed

2 tablespoons olive oil

1 lemon, juiced and zested

2 cloves garlic, minced

1/4 cup fresh parsley, chopped

2 tablespoons fresh mint, chopped

2 tablespoons fresh cilantro, chopped

1/2 teaspoon salt

1/4 teaspoon black pepper

1/2 teaspoon ground cumin (optional)

1/4 teaspoon red pepper flakes (optional)

Instructions
 

  • Rinse quinoa thoroughly under cold water.
    Cook quinoa with water or broth in a saucepan until liquid is absorbed.
    Let quinoa rest, then fluff with a fork.
    In a bowl, whisk olive oil, lemon juice, zest, garlic, salt, and pepper.
    Combine quinoa, chickpeas, and herbs in a large bowl.
    Pour dressing over mixture and toss well.
    Adjust seasoning and serve warm or chilled
