Lemon Poppy Seed Pudding Cake Recipe

Ingredients
  

1 cup granulated sugar

3 large eggs, separated

1 cup whole milk

1/2 cup freshly squeezed lemon juice

1 tablespoon lemon zest

1/4 cup unsalted butter, melted

1/2 cup all-purpose flour

1 tablespoon poppy seeds

1/4 teaspoon salt

1/2 teaspoon vanilla extract

Instructions
 

  • Preheat oven to 350°F and grease a baking dish.
    Whisk egg yolks with sugar until pale and smooth.
    Add butter, lemon juice, zest, milk, and vanilla, then mix well.
    Stir in flour and salt until smooth, then add poppy seeds.
    Beat egg whites to soft peaks.
    Gently fold egg whites into batter.
    Pour batter into dish and place in a water bath.
    Bake for 40 to 45 minutes until set and lightly golden.
    Cool slightly before serving.
