Low-Calorie Chicken Stir Fry

Quick, colorful, and packed with flavor, this Low-Calorie Chicken Stir Fry makes healthy weeknight dinners exciting. Crispy veggies and tender chicken in every bite!

Ingredients
  

1 lb. boneless, skinless chicken breast, cut into bite-sized pieces

2 tsp olive oil or avocado oil

1 cup broccoli florets, fresh or frozen

1 cup sliced bell peppers (red, yellow, or green)

1 cup snow peas, trimmed

1 medium carrot, thinly sliced

3 cloves garlic, minced

1 tsp fresh ginger, grated

3 tbsp low-sodium soy sauce

1 tbsp rice vinegar

1 tbsp honey or maple syrup

1 tsp cornstarch, optional for thickening

2 green onions, sliced for garnish

Salt and pepper, to taste

Optional: sesame seeds for garnish

Instructions
 

  • In a small bowl, whisk together soy sauce, rice vinegar, honey, and cornstarch if using. Set aside.
    Heat 1 tsp olive oil in a large skillet or wok over high heat. Season chicken with salt and pepper. Add chicken and sear 3-4 minutes per side until cooked through. Remove from pan.
    Add remaining oil, garlic, and ginger to the pan. Sauté 30 seconds until fragrant. Add broccoli, bell peppers, snow peas, and carrots. Stir fry 3-4 minutes.
    Return chicken to the pan. Pour sauce over everything and stir 1-2 minutes until thickened and coated.
    Remove from heat. Garnish with green onions and sesame seeds. Serve over rice, quinoa, or enjoy as is.
