Old Fashioned Sauerkraut Salad (Crunchy Tangy Classic Recipe)

This crunchy vintage salad is packed with bold tangy flavor and irresistible texture. Perfect for cookouts, family dinners, and anyone who loves classic homemade side dishes.

Ingredients
  

4 cups sauerkraut, lightly drained1 green bell pepper, finely diced

1 red bell pepper, finely diced

1 medium cucumber, chopped

1 cup celery, thinly sliced

1/2 cup red onion, finely chopped

2 tablespoons fresh parsley, chopped

1/2 cup apple cider vinegar

1/3 cup granulated sugar

1/4 cup olive oil

1 teaspoon celery seed

1/2 teaspoon black pepper

1/4 teaspoon kosher salt

Instructions
 

  • Drain the sauerkraut lightly and place it in a large mixing bowl.
    Dice the bell peppers, cucumber, celery, and onion into small pieces.
    Add all chopped vegetables and parsley to the bowl with the sauerkraut.
    In a separate bowl, whisk together vinegar, sugar, olive oil, celery seed, pepper, and salt.
    Pour the dressing over the salad and toss until evenly coated.
    Cover and refrigerate for at least 2 hours before serving.
    Stir again before serving and adjust seasoning if needed.
    Serve chilled alongside grilled meats, sandwiches, or barbecue dishes.
