Qatayef Asafiri (Cream-Filled Middle Eastern Pancakes Recipe)

Fluffy, cream-filled qatayef that melt in your mouth and feel like a bite of the Middle East. This easy dessert looks fancy but is surprisingly simple to make at home.

Ingredients
  

1 cup all-purpose flour

2 tbsp semolina

1 tbsp sugar

1 tsp instant yeast

1/2 tsp baking powder

1 1/4 cups warm water

1 tsp vanilla extract

1 cup heavy cream

2 tbsp powdered sugar

1 tsp orange blossom water

1/2 cup simple syrup

1 tbsp rose water

1/4 cup crushed pistachios

Instructions
 

  • In a bowl, mix flour, semolina, sugar, yeast, and baking powder. Add warm water and whisk until smooth. Stir in vanilla and let rest 20 to 30 minutes.
    Heat a non-stick pan and pour small rounds of batter. Cook on one side only until bubbles form and the surface dries.
    Transfer pancakes to a towel and cover to keep soft.
    Whip cream with powdered sugar until soft peaks form, then mix in orange blossom water.
    Fold each pancake halfway to form a pocket and fill with cream.
    Lightly dip edges in syrup, sprinkle with pistachios, and serve immediately.
