Quick Chicken Tacos with Slaw

Ingredients
  

1 lb boneless, skinless chicken breasts or thighs, thinly sliced

2 tsp chili powder

1 tsp smoked paprika

1 tsp ground cumin

1 tsp garlic powder

3/4 tsp kosher salt

1/2 tsp black pepper

1 tbsp olive oil

3 cups shredded green cabbage

1 cup shredded red cabbage

1/2 cup shredded carrots

1/4 cup mayonnaise

1 1/2 tbsp fresh lime juice

1 tsp honey

Salt to taste

8 small corn or flour tortillas

Instructions
 

  • Slice chicken thinly and toss with chili powder, paprika, cumin, garlic powder, salt, and pepper.
    Heat olive oil in a skillet over medium-high heat and cook chicken in a single layer until browned and cooked through.
    Remove chicken from the pan and keep warm.
    In a bowl, combine cabbage and carrots.
    Whisk mayonnaise, lime juice, honey, and salt, then toss with vegetables to make slaw.
    Warm tortillas in a dry skillet until pliable.
    Fill tortillas with chicken, top with slaw, and serve immediately.
