Robin Egg Snack Cake with Speckled Frosting (Easy Festive Dessert Recipe)

Ingredients
  

1 ½ cups all-purpose flour

1 tsp baking powder

½ tsp baking soda

¼ tsp salt

½ cup unsalted butter, softened

¾ cup granulated sugar

2 large eggs

1 tsp vanilla extract

½ cup buttermilk

1 cup unsalted butter (for frosting)

3 cups powdered sugar

2–3 tbsp heavy cream

1 tsp vanilla extract

Blue gel food coloring

1 tsp cocoa powder

1–2 tsp water or vanilla extract

Instructions
 

  • Preheat oven to 350°F and prepare an 8x8-inch pan.
    Whisk flour, baking powder, baking soda, and salt.
    Beat butter and sugar until fluffy.
    Add eggs one at a time, then vanilla.
    Alternate adding dry ingredients and buttermilk.
    Pour batter into pan and bake for 25–30 minutes.
    Cool completely before frosting.
    Beat frosting ingredients until smooth and tint blue.
    Spread frosting evenly over cake.
    Flick cocoa mixture over frosting to create speckles
