2 cups fresh spinach, chopped or well-drained frozen spinach
1 cup feta cheese, crumbled
3 large eggs
1/2 cup olive oil
1 cup all-purpose flour
1 tsp baking powder
1/2 tsp salt

1 small onion, chopped
2 garlic cloves, minced
Instructions
Preheat oven to 180°C (350°F) and prepare baking dish.Sauté onion and garlic until fragrant and soft.Prepare spinach by cooking or draining thoroughly.Whisk eggs and olive oil together.Mix dry ingredients in a separate bowl.Combine wet and dry mixtures.Fold in spinach, feta, onion, and garlic.Bake for 30–35 minutes until golden and set.Cool, slice, and serve
