Spinach and Feta Brownies (Savory Spanakopita Bars Recipe)

Ingredients
  

2 cups fresh spinach, chopped or well-drained frozen spinach

1 cup feta cheese, crumbled

3 large eggs

1/2 cup olive oil

1 cup all-purpose flour

1 tsp baking powder

1/2 tsp salt

1/2 tsp black pepper

1 tsp dried oregano

1 small onion, chopped

2 garlic cloves, minced

Instructions
 

  • Preheat oven to 180°C (350°F) and prepare baking dish.
    Sauté onion and garlic until fragrant and soft.
    Prepare spinach by cooking or draining thoroughly.
    Whisk eggs and olive oil together.
    Mix dry ingredients in a separate bowl.
    Combine wet and dry mixtures.
    Fold in spinach, feta, onion, and garlic.
    Bake for 30–35 minutes until golden and set.
    Cool, slice, and serve
