Spinach & Cranberry Stuffed Chicken Breasts

A cozy chicken dinner with a sweet tart twist. These stuffed chicken breasts look gourmet but are so simple to make.

Ingredients
  

4 boneless skinless chicken breasts (about 1.5 lb or 680 g)

1 cup fresh spinach, finely chopped

½ cup dried cranberries

4 oz cream cheese, softened

½ cup shredded mozzarella

1 tsp salt

½ tsp black pepper

1 tsp garlic powder

½ tsp smoked paprika

1 tbsp olive oil

Instructions
 

  • Combine spinach, cranberries, cream cheese, and mozzarella in a bowl.
    Slice a pocket into each chicken breast and season both sides.
    Stuff each pocket with the spinach cranberry mixture and secure with toothpicks.
    Heat olive oil in an oven safe skillet and sear chicken on both sides until golden.
    Transfer skillet to a 375°F oven and bake 18 to 22 minutes or until chicken reaches 165°F.
    Rest 5 minutes, remove toothpicks, and serve.
