Spinach Ricotta Bites

Crispy, cheesy, and packed with spinach, these bites are the perfect snack for any occasion. You'll want to make them again and again.

Ingredients
  

1 cup ricotta cheese (whole milk for creamier texture)

1 cup fresh spinach, finely chopped

1/2 cup grated Parmesan cheese

1/2 teaspoon garlic powder

1/4 teaspoon salt

1/4 teaspoon black pepper

1/4 teaspoon crushed red pepper flakes (optional)

1/2 cup breadcrumbs (panko for extra crispiness)

1 large egg

1 teaspoon olive oil

Non-stick cooking spray

Instructions
 

  • Preheat oven to 375°F (190°C) and grease a mini muffin tin.
    In a bowl, mix ricotta, spinach, Parmesan, garlic powder, salt, pepper, and red pepper flakes.
    Scoop 1 tablespoon of mixture and roll into balls.
    Roll each ball in breadcrumbs until fully coated.
    Arrange bites in tin or on baking sheet, drizzle with olive oil.
    Bake 18–20 minutes, rotating halfway, until golden brown.
    Cool 5 minutes and serve with dipping sauce.
