Preheat oven to 375°F (190°C).Beat butter and sugar until light and creamy.Add egg, vanilla, and almond extract and mix until smooth.Whisk flour and salt and add to the wet mixture to form a soft dough.Load the dough into a cookie press and press shapes onto an ungreased baking sheet.Decorate with colored sugar if desired.Bake for 8–10 minutes until lightly golden at the edges.Cool for 2 minutes on the sheet, then transfer to a rack.
