Strawberry Cookie Boats Recipe (Easy Sweet Dessert Idea)

Strawberry Cookie Boats are soft, creamy, and topped with fresh berries for the perfect easy dessert idea that looks as good as it tastes.

Ingredients
  

1/2 cup (115g) unsalted butter, softened

3/4 cup (150g) granulated sugar

1 large egg

1 teaspoon (5ml) vanilla extract

1 3/4 cups (220g) all-purpose flour

1 teaspoon (5g) baking powder

Pinch of salt

8 oz (225g) cream cheese, softened

1/2 cup (60g) powdered sugar

1 cup (150–200g) fresh strawberries, sliced

Optional: honey or melted chocolate for drizzle

Instructions
 

  • Cream butter and sugar until light and fluffy, then add egg and vanilla.
    Mix flour, baking powder, and salt, then combine with wet ingredients to form dough.
    Chill dough for 20–30 minutes.
    Shape dough into balls, press centers to form boat shapes, and bake at 350°F (175°C) for 10–12 minutes.
    Repress centers while warm and let cookies cool completely.
    Beat cream cheese, powdered sugar, and vanilla until smooth.
    Fill cookie boats with cream mixture and top with fresh strawberries.
    Serve immediately or chill before serving.
