Tasty Coconut Cream Oats

You will want to wake up for this breakfast. These coconut cream oats taste indulgent but feel light and comforting.

Ingredients
  

1 cup rolled oats

1 cup full-fat coconut cream

1 cup water or unsweetened almond milk

1 to 2 tablespoons maple syrup or honey

1 pinch sea salt

1/2 teaspoon vanilla extract (optional)

1/4 teaspoon ground cinnamon (optional)

Fresh fruit or coconut flakes for topping

Instructions
 

  • Add rolled oats to a saucepan over medium heat and toast for 1 minute while stirring.
    Pour in coconut cream and water or almond milk and stir well.
    Bring to a gentle simmer, then reduce heat and cook for 6 to 8 minutes, stirring often.
    Stir in maple syrup or honey, salt, vanilla, and cinnamon.
    Cook 2 to 3 more minutes until creamy, adjusting liquid if needed.
    Remove from heat, rest for 1 minute, then serve warm with toppings.
