The Best Lemon Cream Chia Pudding

Ingredients
  

3 tbsp chia seeds

1 cup milk (dairy or plant-based)

2 tbsp fresh lemon juice

1 tsp lemon zest

2 tbsp maple syrup or honey

1/2 tsp vanilla extract

1/4 cup coconut cream or Greek yogurt

Pinch of salt

Instructions
 

  • Combine milk, lemon juice, zest, sweetener, vanilla, and salt in a bowl.
    Whisk in chia seeds gradually to prevent clumping.
    Stir in coconut cream or yogurt until smooth.
    Let sit for 5–10 minutes, then stir again.
    Refrigerate for at least 2 hours or overnight.
    Stir before serving and adjust consistency if needed.
    Serve chilled with your favorite toppings.
