Tropical Mango Chia Pudding

Wake up to a creamy, tropical treat that tastes like sunshine in a jar. This mango chia pudding is fresh, easy, and perfect for busy mornings.

Ingredients
  

1/4 cup chia seeds

1 cup coconut milk or almond milk

1 cup fresh mango, diced

2 tablespoons maple syrup or honey

1/2 teaspoon vanilla extract

1 tablespoon shredded coconut (optional)

1 tablespoon lime juice (optional)

Fresh fruit slices for garnish

Instructions
 

  • Combine chia seeds, coconut milk, maple syrup, and vanilla extract in a bowl.
    Stir well, let sit for 5 minutes, then stir again.
    Refrigerate for at least 2 hours or overnight until thickened.
    Blend mango with lime juice until smooth.
    Layer chia pudding and mango puree in serving glasses.
    Top with coconut and fresh fruit, then serve
