White Chocolate Raspberry Swirl Cheesecake

Ingredients
  

1 1/2 cups graham cracker crumbs

1/4 cup granulated sugar

6 tablespoons unsalted butter, melted

1 1/2 cups fresh or frozen raspberries

2 tablespoons sugar

1 teaspoon lemon juice

24 oz full-fat cream cheese, softened

3/4 cup sugar

8 oz white chocolate, melted

3 large eggs

1 cup sour cream

1 teaspoon vanilla extract

Pinch of salt

Instructions
 

  • Preheat oven to 325°F and prepare a foil-wrapped springform pan.
    Mix crust ingredients, press into pan, and bake for 10 minutes. Cool completely.
    Cook raspberries, sugar, and lemon juice until thickened, then strain and cool.
    Beat cream cheese and sugar until smooth, then mix in white chocolate.
    Add eggs one at a time, followed by sour cream, vanilla, and salt.
    Pour filling over crust and swirl raspberry sauce on top.
    Bake in a water bath for 60 to 70 minutes until set with a slight jiggle.
    Cool gradually, then refrigerate at least 4 hours before serving.
