Zesty Carrot Sesame Salad

Fresh, crunchy, and bursting with bold flavor, this Zesty Carrot Sesame Salad turns simple carrots into something unforgettable. It is the perfect quick side that tastes bright, nutty, and totally crave worthy.

Ingredients
  

1 lb. fresh carrots, peeled and shredded

2 tbsp. toasted sesame oil

1 tbsp. neutral oil

2 tbsp. rice vinegar

1 tbsp. fresh lemon juice

1 tbsp. honey or maple syrup

1 tsp. freshly grated ginger

1 garlic clove, minced

2 tbsp. toasted sesame seeds

2 tbsp. chopped fresh cilantro

2 green onions, thinly sliced

1/2 tsp. sea salt

1/4 tsp. black pepper

Instructions
 

  • Peel and shred the carrots, then place them in a large mixing bowl.
    Toast sesame seeds in a dry skillet over medium heat until golden and fragrant.
    Whisk together sesame oil, neutral oil, rice vinegar, lemon juice, honey, ginger, garlic, salt, and pepper.
    Pour the dressing over the carrots and toss thoroughly to coat evenly.
    Fold in toasted sesame seeds, green onions, and cilantro.
    Let the salad rest for 15 to 20 minutes, then taste and adjust seasoning before serving
