Zucchini Dip

Turn fresh zucchini into a creamy, flavorful dip that disappears fast at any gathering. This simple recipe is smooth, garlicky, and perfect for dipping bread, crackers, or veggies.

Ingredients
  

2 medium zucchini (about 1 lb. / 500 g), diced

2 tbsp olive oil

3 garlic cloves, minced

1/2 tsp salt

1/4 tsp black pepper

1/2 cup Greek yogurt or cream cheese

2 tbsp lemon juice

2 tbsp fresh dill or parsley, chopped

2 tbsp grated Parmesan cheese (optional)

1 tbsp tahini (optional)

1 tbsp toasted pine nuts for garnish

1 tbsp olive oil for drizzling

Instructions
 

  • Wash and dice the zucchini into small cubes.
    Heat olive oil in a skillet over medium heat. Add zucchini and cook for about 6 to 8 minutes until tender.
    Add minced garlic and cook for one more minute until fragrant.
    Season the mixture with salt and black pepper, then remove from heat and let it cool slightly.
    Transfer the zucchini mixture to a blender or food processor.
    Add Greek yogurt, lemon juice, herbs, Parmesan cheese, and tahini if using.
    Blend until smooth and creamy, scraping the sides if needed.
    Taste and adjust seasoning with extra salt or lemon juice if necessary.
    Transfer to a bowl and refrigerate for at least 30 minutes before serving.
    Drizzle with olive oil, sprinkle pine nuts and herbs on top, and serve with bread, crackers, or vegetables.
